How to store: Root Crops

Root vegetables are nature’s pantry staples. With the right storage, carrots, potatoes, beets, and onions can last for months — no fancy equipment required.

Here’s how to keep them fresh.

The 4 Simple Rules

1. Keep Them Cool
Ideal temperature: 32–40°F
Use a root cellar, unheated basement, garage (if it doesn’t freeze), or fridge.

2. Keep Them Dark
Light causes sprouting — especially in potatoes.

3. Keep Humidity Right
Carrots and beets prefer high humidity (store in damp sand or a produce drawer).
Onions and garlic prefer dry air.

4. Don’t Wash Before Storing
Brush off dirt, but wait to wash until you’re ready to cook.

  • Carrots & Beets: Remove tops, store in damp sand or crisper drawer (3–6 months).

  • Potatoes: Cure first, store in a dark, breathable container (3–5 months).
