Peach Sorbet

Ingredients

  • 3 pounds fresh peaches (about 8 whole), diced (leave the peels on)

  • 2 teaspoons fresh lime juice (from 1 lime)

  • 1 cup organic sugar

  • 1/4 teaspoon course salt

Instructions

  1. Add peaches, lime juice, and sugar to a blender or food processor. Blend until very smooth.

  2. Pour the purée through a fine-mesh strainer into a container. Stir in salt to taste.

  3. Cover and chill in the fridge for 2–3 hours, until cold.

  4. Churn in an ice cream maker according to the machine’s instructions.

  5. Transfer to a container and freeze for 2–3 hours, until firm.

Farm Tip: Use peak-season peaches for the best flavor.
