Peach Sorbet
Ingredients
3 pounds fresh peaches (about 8 whole), diced (leave the peels on)
2 teaspoons fresh lime juice (from 1 lime)
1 cup organic sugar
1/4 teaspoon course salt
Instructions
Add peaches, lime juice, and sugar to a blender or food processor. Blend until very smooth.
Pour the purée through a fine-mesh strainer into a container. Stir in salt to taste.
Cover and chill in the fridge for 2–3 hours, until cold.
Churn in an ice cream maker according to the machine’s instructions.
Transfer to a container and freeze for 2–3 hours, until firm.
Farm Tip: Use peak-season peaches for the best flavor.
