Spring Stir Fry

Ingredients

  • 1 lb flank steak, sliced to 1/4 inch thick

  • 1/2 cup coconut aminos

  • 3 Tbsp toasted sesame oil

  • 1 Tbsp lime juice

  • 2 tsp arrowroot flour

  • 1 tsp coconut sugar

  • 1/2 tsp minced garlic

  • 1/4 tsp ground ginger

  • 2 cups broccoli florets

  • 1/2 cup thinly sliced carrots

  • 1/2 cup sliced sweet white onion

  • 1 tsp toasted sesame seeds

Instructions

Step 1:

Whisk together coconut aminos, 2 tablespoons sesame oil, lime juice, garlic, ginger, arrowroot flour and coconut sugar in a small bowl. Set aside.

Step 2:

Heat 1 tablespoon sesame oil over medium-high heat in a cast iron skillet for 2 minutes. Blot sliced steak with paper towel and add to skillet. Brown for 3 minutes on each side.

Step 3:

Add broccoli, carrots and onion to skillet and pour sauce on top. Gently stir to coat. Bring to a simmer and reduce heat to medium.

Step 4:

Simmer for 6-8 minutes longer, until sauce has thickened slightly. Serve hot topped with sesame seeds.
